Egg and Bacon Bundles

An easy recipe you can make in under 20 minutes

This breakfast recipe is easy to prepare and perfect for breakfast in bed. Serves 2-4.

Ingredients

  • 4 Eggs
  • 8 strips of bacon
  • 2 slices aged cheddar
  • Butter
  • Watercress and Toast to serve

Method

Cook bacon in a frying pan until transparent, transfer to a paper towel-lined plate. Cool slightly.

Cut four 6″ parchment rounds to fit standard-sized muffin cups.

Crisscross 2 bacon strips in each of 4 muffin cups. Crumble and divide aged cheddar evenly between the four muffin cups.

Crack one egg in each cup. Season with salt and pepper.

Bake in 350 Fahrenheit oven for 10-15 minutes, until bacon is crispy and egg white is cooked through.

Allow to cool 2-3 minutes. Transfer to plate and remove parchment paper before eating.

Serve with toast and watercress. Enjoy!!
