Mussels 3 Ways

Three delightful ways to prepare fresh muscles.

Once at home, remove the mussels from the mesh bag they have been purchased in and place in a large container. Cover the mussels with damp paper towel.

Never store mussels in water; this will destroy them and make them unsafe to consume.

Drain any water that collects at the bottom of the container every day and then cover with a freshly ampened paper towel. Consume mussels within 2 days of purchase for the best results.

Fresh mussels should be heavy for their size; this means that they still contains plenty of seawater. The shell should look wet or somewhat glossy rather than dry and chalky.

They should smell like the sea. If the mussels are past their prime, they will have a deeply unpleasant, funky odour. The shells should be closed. Some mussels might be slightly opened. If you gently squeeze the mussel closed and it remains closed after you release the pressure, the mussel is safe to proceed in the cooking process.
