How to Make Creamy Caesar Salad Dressing

This easy dressing uses silken tofu for creaminess & is perfect for vegetarian menus.

This Caesar salad dressing uses silken tofu for creaminess instead of raw egg or mayo which is ideal for vegetarian menus and has the extra benefit of a protein boost. Feel free to use whatever crunchy, interesting toppings you like best when your dress your salad. Serve this dressing over Kale Caesar Salad With Garlic Croutons or use this recipe as a dip for raw veggies or smear on toasted bread for an open-faced chicken Caesar sandwich. 

Ingredients for Creamy Caesar Dressing. Serves 4.

Half a 350-g box silken tofu
 ¼ cup grated Parmesan
¼ cup canola oil
1 large garlic clove, peeled
2 tablespoons lemon juice
2 teaspoons Dijon mustard
¼ teaspoon salt

Instructions: 

To make the dressing, combine all the dressing ingredients in a small blender. Purée until smooth. Add a little water if it’s too thick to pour over the salad.  

Serve this dressing over Kale Caesar Salad With Garlic Croutons
