Healthier Pasta or Pizza Sauce

Quick and Easy Sauce Made from Leftovers

INGREDIENTS:

Leftover vegetables
Plum tomatoes
Garlic
Onions (diced)
Salt & Pepper to taste

METHOD:

In a medium saucepan, combine up to 2 cups of any leftover vegetables and one large tin of plum tomatoes.

Add fresh, roasted, or black garlic, and a medium diced onion. Bring to a boil, then simmer until all vegetables are soft.

Puree with a hand blender and freeze in ice cube trays.

Use for individual pizza or pasta topping, or large family meals over meatballs and pasta, spaghetti squash, or cauliflower rice.
